BADAM HALWA
Ingredients :
Badam/Almonds - 1 cup.
Sugar - 1 cup ( adjust as per ur taste , u can also add 1/4 cup more sugar if u like more sugar )
Ghee - 1/2 cup ( adjust )
Milk - 1/2 litre
Saffron strings
Cardamom powder
Method:
Soak the badams in hot water for an hour or two
Remove the skin and grind it into a smooth paste by adding milk into this ( add 1/2 cup first, grind it and then add more and grind them )
In a non stick pan add the sugar and add 1/2 cup of water to it. boil till the sugar dissolves. once they are completely dissolved add the ground almond paste to it.. ( reduce the flame while adding the almond paste )
Mix this without any lumps.. then add the saffron strings and the cardamom powder
Keep stirring it continuously and start adding ghee to it..
When u see white bubbles on the sides of the pan, this mixture will start to leave the sides of the pan..
Do this in medium and low flame
Once the halwa leaves the sides of the pan, transfer it to a greased bowl ..
You can store this in refrigerator for 4-5 days . just warm it up in the microwave before eating and that gives the right taste to the badam halwa
Note :
Adding the right amount of ghee will give a nice texture to the halwa .. so add the mentioned quantity ( if u like to u can add lil more to )
once it cools down it will be thickened, so wait for a while to get the perfect texture..
