Ingredients : 

Cabbage - finely shredded
Carrot  - 1 finely shredded
leeks  - 1 stem finely sliced.
Parsley  - finely chopped ( a handful ) 
Mayo  - 1/2 cup or to taste 
Dijon Mustard  - 1 tsp ( i dint have the dijon so i used the normal mustard ) 
Apple Cider Vinegar - 1 Tbsp 
Lemon juice -  1 tbsp
Sugar - 1 tsp 
Salt and pepper to taste 

Process : 

1) In a large bowl, add the shredded carrots, cabbage, leeks set aside.

2) In a small bowl, whisk together the Mayo, mustard, sugar, apple cider vinegar, lemon juice, pour over the 
coleslaw mixture, sprinkle some salt and pepper,  toss until everything is well incorporated. 

3) Chill it for 4-5 hrs or atleast an hour.. 

Note : Also can use it and make coleslaw sandwich.. just spread the coleslaw between bread slices ..
